What’s for lunch? Gluten free lunchbox

If you have a long day of shooting ahead or castings to attend, eating a substantial, healthy lunch may be low on your list of priorities. The lack of dietary options at a shoot, or being busy with hair and makeup while lunch is being served, may leave you a little hungry and angry, hangry!

To maintain your energy levels for the day and ensure you don’t crash from lack of energy, then pack a lunchbox and take it with you! You can prepare it the night before, then pack it in your lunchbox in the morning, add a freezer block and throw it all in your bag and head out the door.

Fruit

Grapes, berries, bananas, mandarins and apples don’t require preparation and can be eaten on the go.

Nuts and seeds

They pack a whole lot of nutrients into such a small package and can be snacked on throughout the day.

Chia pudding

This is super easy to make using chia seeds and your choice of milk (almond, rice, soy, dairy, coconut).

In a bowl, whisk or stir 1 cup of milk with 3 tablespoons of chia seeds. Leave it to sit for a few minutes and stir again. Once it has thickened store it in the fridge for up to three days and serve when needed with berries or sliced fruit.

Zucchini bites

These simple little bites only take about 20 minutes to prepare and cook and can be eaten as a snack or for breakfast. The recipe makes about 6 and can be eaten fresh out of the oven, or chilled from the fridge or your lunch box. Head here for the recipe.

Chicken salad

The best thing about chicken salad is that it tastes just as good chilled as it does warm. So if you don’t have access to a microwave then this will give you a much needed protein and fibre boost to keep you full for longer.

Mix up a little cooked chicken, baby spinach, carrots and any other vegetables that you have on hand, avocado, tomato, capsicum, lettuce and cucumber would work really well. Top with olive oil, lemon juice and few chilli flakes for a simple dressing.
